Mr. Injera Shows His First-ish Attempt
OK--this was my second attempt at making an Ethiopian staple. Injera is both utensil and food. How's that for efficiency?
I turned 42 today, and got a special Ethiopian meal for dinner. We've had an African cookbook for a while now, but just recently received the teff flour we needed to make Ethiopian injera bread. Like a tough sourdough pancake, injera is how you get everything else to your mouth. You fry injera fast and hot in a pan, and it only took one botched attempt (one prototype) to figure it out.
Ethiopian food is HOT, and our lips were burning even with less spice than the recipes called for. Ethiopians would have laughed at us (then reached for the hot sauce). The eggs were a big hit with the younger girls, Mackenzie loved most everything, Anneliese struggled.
Also special for my birthday was a call from the car dealership saying our used GMC airport shuttle passenger van is in Redding, getting new shoes and a full check-over. We'll pick it up tomorrow or Saturday. I can't wait to climb into the driver's seat, start that beast up and ask, "What airline?". Ready for a real shock? It's white.
The older you get, the less eventful your birthdays become. This birthday was even more forgettable than my 41st, which we celebrated about four months ago (or so it seems). It's gotten so bad that Kristen doesn't even ask me what I want anymore, because I can never think of anything. (Anything we can afford, that is.)
Big screen HDTV? Not in the cards. Dirt bike? I'd kill myself. Another computer? Don't really need six. Nose hair trimmer? Hmmm...
